data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>The Barrelworks project presents two spontaneously fermented beers for the first time: Ferus Spontaneous and Ferus Fruitaneous, fermented in David Walker&#8217;s family barn.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-46cc432 elementor-widget elementor-widget-heading\" data-id=\"46cc432\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">BELGIAN TRADITION, CALIFORNIAN YEASTS<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ac4d91e elementor-widget elementor-widget-text-editor\" data-id=\"ac4d91e\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>The production of these beers begins with the creation of the wort inside the <strong>Propagator R&#038;D<\/strong> brewery in Venice, California, using the traditional blend used in Belgium for <strong>Lambic<\/strong>: 60% barley malt and 40% wheat.<br\/>Once the wort is ready, it is transferred to the <strong>coolship<\/strong>, the traditional vessel for open-air spontaneous fermentation, located in the loft of a <strong>Walker family<\/strong> barn, where it rests overnight among the yeasts and bacteria naturally present in nature. The blend is designed to give the beer the right balance, balancing the maturation time and the quality of individual barrels according to the traditional methods used in Belgium for <strong>Geuze<\/strong>.<\/p><p>The result is a beer with aromas of <strong>Meyer lemon zest<\/strong> (a cross between a citron and a mandarin\/pomelo hybrid), <strong>good volatile acidity<\/strong> with funky notes, and <strong>a fresh effervescence on the palate<\/strong>.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-6b50da6 elementor-widget elementor-widget-heading\" data-id=\"6b50da6\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">FERUS FRUITANEOUS<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-76a6cd9 elementor-widget elementor-widget-text-editor\" data-id=\"76a6cd9\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Ferus Fruitaneous celebrates the abundance of seasonal harvests. As is done in Belgium for Kriek and Framboise, Ferus Spontaneous also has its own version <strong>fermented with<\/strong> <strong>fresh fruit<\/strong>.<\/p><p>Starting from the same 100% spontaneously fermented beer, the selected blend is further <strong>matured for 4 months on approximately 400 kg of freshly harvested raspberries and Mexican guava<\/strong>. Just as with the cherries and raspberries used in Belgium, the fruit selected for this blend is also naturally rich in microflora and bacteria that trigger a secondary fermentation.
